Pink Soup, Yes Please!

It has been mighty warm down here in southern Florida this summer.  The heat tends to make it difficult to eat warm meals, but I love soup.  I have been on a mission to find a recipe that sounds delightful, fresh, and light.  The recipe that I keep wanting to try is Ina Garten's Summer Borscht.   I made up my mind and decided to make this for dinner.  I served the chilled soup along with tuna salad sandwiches on the yummy french bread pictured above.  For a first timer it did take me a chunk of the afternoon to make, including the chill time of four hours, but it was well worth it.  I think I won Zach over tonight.  Link below for the original recipe from Food Network.

Flamingo Flamingo

I have been feeling very pink the last few days and its keeping me in a very cheery mood.  I tribute the extra cheeriness to Florida; where there has been many more sunny days in my calendar than when I lived in NYC.  Florida is also likely to do with my warm weather obsessions such as citrus fruits, cacti, palm trees, and flamingos of course!!  However, maybe my pink obsession comes naturally. I would be remiss if i didn't mention I waited over a year for my pink peony Mansur Gavriel bucket bag.  And look at my toenails.  I made pink soup a week ago. Honestly, if flamingos were brown I probably wouldn't like them as much- sorry!! The good news is flamingos are pink, and I love them.  NY or Florida, the color speaks to me.   So naturally, I couldn't resist this flamingo skirt. I am head over heels, literally obsessed with my new skirt from chicwish.com.  Perfectly flamingo and pink. Let's just say this week will be my pink week.  Hmmm, so what else should be on my pink week agenda?   xo RCN
